Cette reconstitution d'un vrai jardin médiéval est sans doute unique au monde : au Moyen Age, ces jardins étaient situés juste sous les murailles des châteaux, pour réduire au minimum les sorties hasardeuses. Chaque petit carré cultivé avait une fonction bien précise : jardin potager, jardin de plantes médicinales, jardin de plantes aromatiques… Sous des noms symboliques, on retrouve le jardin des Vertus, le jardin des Vices, le jardin des Odeurs, le jardin du Goût, le jardin de la Princesse, le jardin des Plantes tinctoriales (servant à la teinture des tissus). Tout un monde médiéval disparu nous est ainsi restitué !
